OUR STORY
Sigma is a global company born in Mexico, our purpose is to bring communities everywhere favorite foods to love. With presence in 18 countries and more than 50 brands, we provide quality products in perishable categories, such as packaged deli meats and cheeses.
Mexican Cheese Producers Inc was established in 1994, the original founder from Guanajuato, Mexico, began producing 60lb wheels of authentic Cotija to be sold in the Chicago market, a strong demand for his cheese encouraged diversification into multiple Mexican and Caribbean cheeses, and eventually led to the construction of a brand new production plant in Darlington, Wisconsin. A prime location with access to the finest quality milk in the country.
Our flagship Cotija cheese recently won the 1st Place best of class at the 2020 World Championship Cheese contest, joining our Panela Cheese which won 1st place in the 2019 US Championship, other cheeses we carry are Fresco, Quesadilla, Blanco, Chihuahua and a wide variety of creams.
In Mexico, Sigma has the #1 Market Share position, not only we are experts in Mexican Cheeses, but we are also able to produce and import directly from our Jalisco, Mexico plant. We follow artisanal cheesemaking techniques to hand braid our Oaxaca Cheese, the finest available in the US.

FRESCO
Fresco is the most popular cheese used in Mexican cooking. It is a high moisture cheese with a crumbly texture and milky flavor. It does not melt when heated. You will find a wide variety of Frescos ranging from higher moisture to lower moisture and mild to strong flavors. It is made from Pasteurized Cow’s milk.
Attributes and Advantages:
• Meaning ‘fresh cheese’ in Spanish, our milky white, subtly salty crumbling queso fresco provides the perfect balance for Mexican recipes.
• For our Fresco cheeses, we have different options ranging in moisture and cream, allowing us to offer a targeted solution to different applications or regional preferences.
• Our authentic Mexican-style crumbling cheese enhances everything from salads and tamales to tacos and enchiladas.
• It can also be referred as Queso de Rancho, Ranchero, Sierra and Canasto.
• You can also substitute Queso Fresco for any recipes calling for goat cheese, feta, or ricotta.
• Easily crumble by putting a chunk of the cheese in a sealed bag and massage the bag until it is crumbly. Another way is to gently break off pieces of the cheese with a fork or with your fingers.

COTIJA
Cotija is a cow’s milk hard cheese that is dry and crumbly with a resemblance to feta cheese. It’s a salty cheese with a distinctive strong flavor.

• Some Cotija cheeses have an extremely strong aroma, our Cotija is balanced to perfection.
• Cotija cheese originated in the Mexican state of Michoacán in the town of Cotija. It is still being produced some 400 years after it was first introduced.

OAXACA
Oaxaca is a pasta-filata cheese that is a staple in Mexican cooking and similar to string cheese or mozzarella. An authentic Oaxaca is a string cheese that is braided into a ball. It has a mild flavor and is great for melting.

PANELA
Panela is another popular fresh cheese with a mild flavor. It is white in color similar to Fresco; however, the texture is not crumbly and it’s less salty. Great for cooking, as its mellow flavor soaks up flavors of other ingredients. Extremely popular in Mexico as a table cheese, and a top choice as ingredient for authentic Mexican cuisine.

• Our Award-Winning Panela formula comes directly from the source, we invited one of our Cheesemakers from Mexico to move to Wisconsin to make this fabulous cheese, using the finest milk in the country.
• Queso Panela originated in central Mexico. It is commonly referred to as Queso Canasta, which literally translates to “basket cheese,” because it is molded in baskets.

MELTING CHEESES
These are specially used for melting, such as Chihuahua cheese and Quesadilla cheese
Chihuahua:
• Named after the Mennonite farmers from Chihuahua, Mexico, this cheese is slightly yellow, that has a sharper but mild, buttery taste.
• Its flavors intensify with age and become tangier and sharper over time.
• Similar in taste and texture to Monterey Jack, allowing for easy substitutions in your favorite cheesy dishes.
• The firm, yet supple texture creates a soft, melting cheese that’s perfect for meals such as queso fundido, chiles rellenos, tamales, lasagna, casseroles and more.
Quesadilla:
• Quesadilla Cheese is not really a Mexican cheese, you won’t find it in Mexico. It was born in the USA with the popularity of Quesadillas, though often, Oaxaca or Chihuahua cheese is used as the basis for quesadillas.
• Quesadillas originated in the southern and central regions of Mexico. Authentic corn quesadillas are cooked on a flat griddle called a comal and are stuffed with cheese and perhaps meat or vegetables. In the Northern parts of Mexico Flour tortillas are more popular.
• Ideal to use in any dishes calling for melted cheese. Besides quesadillas, use it as the base for Mexican pizza, a grilled cheese sandwich, or make a Mexican cheese dip to serve at parties.
Chihuahua:

CARIBBEAN
• Queso Blanco is the most popular Caribbean cheese, its white and fresh, very similar to a Panela Mexican Cheese. Very popular across all Latin America.
• Queso para Freir, is another variety of Queso Blanco that is used for frying. Fry it directly on a pan to develop an irresistible golden-brown crust.

MEXICAN CREAMS
Acidified Mexican style sour cream is closer in texture and consistency to crème fraîche (a heavy cream regularly used in French cuisine) than it is to conventional Cultured Sour Cream.
